New Mexico Stout Gouda


Very flavorful and delightful asiago made with rich cow’s milk and vegetable rennet.



The Old Windmill Dairy makes a cow’s milk stout gouda using artisan stout made from local breweries around the state. This cheese will very depending on what brewer we use. This is an exceptional cheese that is great just for snakcing. It is made in artisan fashioned round wheels. When you cut into the middle you can see the rich marbling from the stout. We do not use any  artificial hormones, no RBST or added colors. This stout gouda is unique as it is made with vegetable rennet and hand made.
