The Old Windmill Dairy, a New Mexico Artisan goat and cow dairy, produces a delicious nutty almost fruity goat cheese. The cave aged goat cheese is the perfect blend of cheddar and manchego made from goats milk. I love this paired with a variety of olives and a good charcuterie plate. An IPA is amazing paired with this cheese. It reduces the hops in the beer and enhances the cheese flavor.
At the 6th month mark this cheese takes on undertones of a grapefruit flavor and a medium cheddar.
12 months aged McIntosh Cave Aged Goat Cheese – At six months this cheese tastes more like a Manchego than cheddar which is rich and packed full of flavor
